Easy Bagels

Ingredients
Dough:
2tsp Instant Dry Yeast
500g Lamb Brand Plain Flour '0'
1tbsp Sugar
300ml Lukewarm Water
1.5tsp Salt
1/2tsp Oil
Bagel Topping Mix:
1tsp Chopped Dry Garlic
1tsp Dry Onion Flakes or Chopped
1tbsp Sesame Seeds
1tbsp Lamb Brand Poppy Seeds
1tsp Crushed or Flaked Salt
1 Egg
Directions:
1. Start with the dough. In a large bowl or mixer bowl (if using food mixer) place the instant yeast, sugar, and water. Give it a gentle mix and allow it to get frothy. This should take about 10 minutes.
2. Add the flour and salt and start combining them together (by hand or mixer)
3. The ratios should be good but if it's too wet or too dry just adjust it with some water or flour.
4. Knead for 12 to 15 minutes until you get an elastic firm dough.
5. Place it on your kitchen top with a little flour and form it into a ball.
6. Place it in your bowl and seal it with some oil. Cover with a kitchen towel and allow it to rest for at least 1.5 hrs until it doubles in size.
7. In the meantime combine the topping mix ingredients.
8. After the dough has risen, deflate it and cut it into 8 portions.
9. Form each portion into a ball. Cover them with a kitchen towel to avoid dryness.
10. Using your thumb and index finger, pinch a hole in the middle and for the bagels. The hole should be around 1.5 inches wide.
11. Bring a large pot of water to a gentle boil, and boil the bagels for 2 minutes per side.
12. After boiling, place them on a baking sheet lined with baking paper.
13. Create an egg wash by whisking an egg with a couple of tablespoons of water and lightly brush the bagels.
14. Sprinkle generously with the bagel topping mix and bake them in a preheated 220°c oven for 20 - 25 minutes until nicely browned.
15. Serve them with cream cheese, salmon, butter, parma ham, or anything you desire. Enjoy!
