Chicken & Couscous Wrap
Savoury chicken pieces, spicy tomato couscous, and crunchy lettuce enclosed in a soft wrap. Guilt-free lunch idea.
Ingredients (2 portions)
300g Lean Chicken Breast (cut into bite-size pieces)
1 bag Lamb Brand Kuskus (Spicy Tomato)
1tsp Lamb Brand Crispy Fried Onions (optional)
1tsp Olive Oil
2tsp Relish Premium Rub (Poultry)
Some Fresh Lettuce
2 Durum Tortillas (30cm)
Salt & Pepper (to taste)
Method:
Cut the chicken and place its into a bowl.
Drizzle with the olive oil and add the relish rub to it.
Mix well and air-fry for 15 minutes at 180°c.
Alternatively, you can bake it or shallow fry in little oil.
Place the couscous into a bowl. Add boiling water about 2cm above the couscous, and cover it. Let it stay like this for not less than 6 minutes.
Once the chicken is ready allow it to cool off, and fluff the couscous with a fork.
If you like to add some crisp to it, add about a teaspoon of crispy onions.
Place a tortilla on a clean surface, add some lettuce, half of the couscous, half of the chicken, fold the sides, then start rolling it until you close the wrap.
Do the same with the other tortilla, cut in half and serve.
