Whipped Feta Bruschetta
Quick and easy snack, ideal for parties, starter, or BBQ accompaniment.
Ingredients:
400g Cherry Tomatoes
3-4 Garlic Cloves
1tsp Dry Thyme
4tbsp Olive Oil
1tbsp Tomato Paste (kunserva)
1 Large Baguette (or Maltese bread)
1 Olympus Feta Cheese
1tbsp Cream Cheese
Fresh Parsley
50g Edrini Prosciutto Crudo
Freshly Ground Pepper
Method:
Place the tomatoes, garlic, thyme and oil in a small dish and place it in the oven at 200°c for about 30 minutes, or until the garlic and tomatoes are soft and slightly browned.
In the meantime, cut the baguette into slices, place them on a baking sheet, and spray them with little oil.
Place the bread in the oven too until lightly coloured. Keep an eye on it!
For the whipped feta, simply blend together the crumbled feta, cream cheese, parsley, and some freshly ground pepper until nice and creamy.
When the tomatoes are ready, allow them to cool down.
Then squash everything together with a fork, add the tomato paste and add some pepper. Mix well.
To assemble the bruschetta, simply spread some whipped feta, topped with the tomato, and finish off with some delicious prosciutto.
