Paprika & Lime Chicken

A healthy, flavourful and fresh chicken dish without the extra calories. 


Ingredients: (serves 2)

  • 1/2 Red Bell Pepper (sliced)

  • 1/4 Chilli Pepper (finely chopped)

  • 400g Prime Chicken Breast (cubed)

  • 1tsp Olive Oil

  • Rind of 1 Lime (grated)

  • Juice of 2 Limes

  • 2 Garlic Cloves (sliced)

  • 1tsp Sweet Paprika Powder

  • 2tbsp Fresh Basil (finely chopped)

  • Salt & Pepper (to taste)

  • Cooked Rice


Method:

  1. Cut the chicken breast into bite-size pieces.

  2. Place the chicken into a small bowl and add to it the oil, rind of one lime, juice of two limes, garlic, chilli, paprika powder, fresh basil, and salt & pepper.

  3. Mix well, cover, and let it marinate for at least 2 hours in the fridge. Leave it for longer to get more flavour.

  4. To cook, simply add to a hot skillet followed by the sliced pepper. Cook for at least eight minutes, stirring frequently.

  5. Serve with plain rice or grilled vegetables.
