Paprika & Lime Chicken
A healthy, flavourful and fresh chicken dish without the extra calories.
Ingredients: (serves 2)
1/2 Red Bell Pepper (sliced)
1/4 Chilli Pepper (finely chopped)
400g Prime Chicken Breast (cubed)
1tsp Olive Oil
Rind of 1 Lime (grated)
Juice of 2 Limes
2 Garlic Cloves (sliced)
1tsp Sweet Paprika Powder
2tbsp Fresh Basil (finely chopped)
Salt & Pepper (to taste)
Cooked Rice
Method:
Cut the chicken breast into bite-size pieces.
Place the chicken into a small bowl and add to it the oil, rind of one lime, juice of two limes, garlic, chilli, paprika powder, fresh basil, and salt & pepper.
Mix well, cover, and let it marinate for at least 2 hours in the fridge. Leave it for longer to get more flavour.
To cook, simply add to a hot skillet followed by the sliced pepper. Cook for at least eight minutes, stirring frequently.
Serve with plain rice or grilled vegetables.
