Vegan Sweet & Sour 'Chicken'

Ingredients

  • 1pkt Quorn Vegan Pieces

  • 50g Plain Flour

  • 100ml Cold Water

  • 1tsp Olitalia Extra Virgin Olive Oil

  • 1 Onion

  • 2 Garlic Cloves

  • 1/2tsp Grated Ginger

  • 1/2 Green Pepper

  • 50g Pineapple Chunks

    Sweet & Sour Sauce:

  • 20ml of Hot Water

  • 2tbsp White Vinegar

  • 2tbsp Sugar

  • 3tbsp Tomato Ketchup

  • 1tbsp Soy Sauce

  • 1tsp Honey

  • 1tbsp Cornflour

  • Vegetable Oil for Frying

  • Cooked Noodles to Serve

Directions:

  • 1. In a small bowl combine the water and flour together until you get a paste.

  • 2. Heat about 2 cm of vegetable oil in a saucepan.

  • 3. Dip the Quorn pieces into the batter and fry until they start to get golden. Turn halfway through. This should take around 2 minutes per side.

  • 4. Fry in small batches to keep a constant temperature.

  • 5. Dry on a paper towel and set aside.

  • 6. Prepare the sweet & sour sauce by combining all the ingredients in a small bowl and set aside. Alternatively, use about 200ml of ready-made sauce.

  • 7. Remove the frying oil or use a different skillet.

  • 8. Place a tsp of E/V Olive Oil on medium heat.

  • 9. Add the chopped onion and crushed garlic.

  • 10. Fry for a couple of minutes then add the ginger and green pepper. Stirring constantly.

  • 11. When the onion is cooked and translucent, add the pineapple.

  • 12. Fry for another minute and add the sauce.

  • 13. When it starts to boil lower the heat then add the fried Quorn pieces.

  • 14. Gently stir until well combined and cook for about 3 minutes on a low flame.

  • 15. Serve with rice or noodles.
