Parmesan-Crusted Chicken
Incredibly easy, tasty and moist! Succulent chicken thighs encrusted with a crispy flavourful breadcrumb/Parmesan crust.
Ingredients: (serves 2)
600g Skinless Chicken (thighs or breast)
30g Zanetti Parmesan Cheese. (Grated)
1tsp Garlic Granules
1/2tsp Oregano
Salt & Pepper to Taste
Method:
In a bowl, mix the breadcrumbs, Parmesan, garlic, herbs, and a pinch of salt and pepper.
Pat the chicken dry, then spread some mayonnaise over each one in a thin, even layer. This not only helps the coating stick but keeps the chicken moist and tender.
Press the mayo-coated chicken into the breadcrumb mixture so it’s nicely coated all over. Press gently to help the crumbs stick.
Place the coated chicken on the prepared tray and drizzle with a bit of olive oil if you’d like extra crispiness.
Bake in a preheated 200°c oven for 25 to 30 minutes, until the chicken is golden and fully cooked through.
