Parmesan-Crusted Chicken

Incredibly easy, tasty and moist! Succulent chicken thighs encrusted with a crispy flavourful breadcrumb/Parmesan crust.  


Ingredients: (serves 2)


Method:

  1. In a bowl, mix the breadcrumbs, Parmesan, garlic, herbs,  and a pinch of salt and pepper.

  2. Pat the chicken dry, then spread some mayonnaise over each one in a thin, even layer. This not only helps the coating stick but keeps the chicken moist and tender. 

  3. Press the mayo-coated chicken into the breadcrumb mixture so it’s nicely coated all over. Press gently to help the crumbs stick.

  4. Place the coated chicken on the prepared tray and drizzle with a bit of olive oil if you’d like extra crispiness.

  5. Bake in a preheated 200°c oven for 25 to 30 minutes, until the chicken is golden and fully cooked through.
