Rabbit Pizza Bowls
Ingredients:
Sauce:
1tsp Olive Oil
400gr Rabbit Meat
1/2tsp Thyme
1/4tsp Garlic Granules
1 White Onion
2 Carrots
1/4tsp Salt
1/4tsp Pepper
100ml Red Wine
1/2tsp Worcestershire Sauce
1tbsp Tomato Purée (concentrate)
1/4tsp Sugar
300gr Passata di Pomodoro
100ml Water
1/2tsp Chicken Stock Powder
2tsp Melted Butter
8-10 Slices Provolone Cheese
8-10 Slices Mozzarella Cheese
6 Large Mushrooms
400gr Ready-Made Pizza Dough
Directions:
1. On medium-high heat fry chopped rabbit meat with a tablespoon of olive oil. We used rabbit belly.
2. When it's browned add thyme, garlic granules, chopped onion, diced carrots, salt & pepper, red wine, Worcestershire sauce, tomato purée, sugar, passata di pomodoro, water, and chicken stock powder respectively. Stirring throughout the process.
3. Bring to a boil and reduce the heat to low.
4. Simmer for about an hour or until the sauce has thickened.
5. Brush melted butter on the inside of an ovenproof bowl. Covering the edges as well.
6. Line with provolone and mozzarella cheeses.
7. Place 3 large mushrooms.
8. Add rabbit sauce.
9. Cover everything with pizza dough, sealing the bowl tightly.
10. Bake in a preheated 220°c, oven for about 30mins. Or until the dough is fully browned.
11. Take out of the oven and let them rest for 5 minutes.
12. Carefully flip onto a plate and remove the bowl with the help of a spoon. Be careful, bowls are hot!
