Gozo Cheese Kievs
Ingredients:
Filling
200g Salted Butter
3-4 Crushed Garlic Cloves
2tbsp Chopped Parsley
50g (half) Gozo Peppered Cheeselet
Shell
5 Boneless Chicken Thighs
Salt (to taste)
1cup All-Purpose Flour
3 Eggs
2cups panko Breadcrumbs
Vegetable Oil for Deep Frying
Directions:
1. For the filling combine butter, garlic, parsley, and grated cheeselet.
2. Wrap in cling film forming 5 small balls.
3. Freeze for about an hour until solid.
4. Flatten out chicken thighs with the use of a kitchen mallet.
5. Season well with some salt.
6. Place the butter mixture in the center and fold into balls. Cover the filling well.
7. Freeze until solid. (2-3hours)
8. Dip in flour then egg mixture. Repeat twice. This will create a tight seal.
9. Dip in egg and panko. Repeat as well and press well to coat the kievs completely.
10. Deep fry at 180°c, a minute each side. This will create the crust and help the kievs keep their shape.
11. Bake preheated at 180°c for 20-25 minutes until golden brown.
12. Let them rest for 5 minutes and serve.
