Rabbit Liver Stroganoff
Ingredients:
500g Rabbit Liver
1tsp Olitalia Olive Oil
1 Onion
1 Red Pepper
100g Chestnut Mushrooms
300ml Semi Skimmed Milk
Salt & Pepper
Directions:
Thinly slice the onion and fry it in the olive oil until it starts to soften.
Add the liver to the pan and season with salt & pepper.
Fry well until it’s nicely browned.
While it’s cooking, slice the bell pepper and the mushrooms. If they are small mushrooms, just slice them in half.
Add them to the liver and cook for a couple of minutes on low heat.
Mix the Stroganoff mix with the milk and add it to the pan.
Mix well, bring to a boil, and then simmer for about 8 minutes on the lowest heat setting.
Serve with mashed potatoes or short pasta like Rigatoni.
