Corned Beef & Couscous Patties
Ingredients:
2tbsp Olitalia Olive Oil
340g (one large can) Corned Beef
500g Tipiak Couscous (cooked)
1 Small Onion
2 Large Eggs
1/2tsp Paprika
1/2tsp Oregano
2tbsp Flour
Salt & Pepper to Taste
Directions:
Cook the couscous as instructed and fluff it up with a fork.
Place it in a large bowl.
Break the corned beef and add it to the couscous.
Finely chop the onion and add it to the bowl.
Follow with the oregano, paprika, and salt & pepper.
Crack the eggs and mix everything until well combined.
Dampen your hands to avoid the mix to stick to your hands, and form the patties. I used about half a cup measure for each patty.
Lightly pass the patties through the flour and gently fry in the olive oil for about 4 minutes per side.
If you prefer baking or air-fry them, do not coat them in flour.
Instead, lightly brush them with some oil and cook at a moderate temperature until nicely browned.
