Corned Beef & Couscous Patties

Crispy on the outside, and soft on the inside these corned beef and couscous patties are so tasty. Ideal as a snack and also deliciously served cold.


Ingredients:

  • 2tbsp Olitalia Olive Oil

  • 340g (one large can) Corned Beef

    500g Tipiak Couscous (cooked)

    1 Small Onion

    2 Large Eggs

    1/2tsp Paprika

    1/2tsp Oregano

    2tbsp Flour

    Salt & Pepper to Taste

Directions:

  1. Cook the couscous as instructed and fluff it up with a fork.

  2. Place it in a large bowl.

  3. Break the corned beef and add it to the couscous.

  4. Finely chop the onion and add it to the bowl.

  5. Follow with the oregano, paprika, and salt & pepper.

  6. Crack the eggs and mix everything until well combined.

  7. Dampen your hands to avoid the mix to stick to your hands, and form the patties. I used about half a cup measure for each patty.

  8. Lightly pass the patties through the flour and gently fry in the olive oil for about 4 minutes per side. 

  9. If you prefer baking or air-fry them, do not coat them in flour.

  10. Instead, lightly brush them with some oil and cook at a moderate temperature until nicely browned.
