Spiced Pumpkin Bread
A savoury bread loaf infused with the gentle warmth of spiced pumpkin. Delicious with a spread of butter, and even better toasted!
Ingredients:
200g Pumpkin (cubed)
1/2tsp Lamb Brand Ground Cinnamon
A dash of Lamb Brand Ground Nutmeg
30ml Sunflower Oil
320ml Natrue Oat Pumpkin Spice Milk
750g Lamb Brand Soft White Bread Mix
Method:
Place the pumpkin in a bowl, add the spices and a teaspoon of oil.
Mix well, then bake at 200°c for about 25 minutes or until soft and lightly brown.
Place it in a blender together with the rest of the oil, and the pumpkin spice milk.
Blend it for about 4 minutes until smooth and frothy.
Sift the flour mix in a mixer bowl with the dough hook attached.
Turn on the mixer and start adding the spiced milk mixture until a dough starts coming together.
Knead for about 7 minutes on low speed until you obtain a nice soft dough. If it is too dry or too wet, fix it with a tablespoon of water or flour accordingly.
Place the dough in a bowl, cover with cling film and let it rise in a warm place for at least an hour. It should double in size.
Deflate the dough, and place it in your bread or cake tin lined with baking paper.
Cover it with a clean kitchen towel, and let it lightly rise again on top of the kitchen counter.
Preheat the oven to 180°c and bake for about 40-45 minutes or until nicely browned.
Remove from the tin and let it cool off completely before cutting.
