BBQ Chicken & Feta Gyros
A great idea for a healthy, flavour-packed lunch. Tender BBQ chicken breast served with a zesty garlic Greek yoghurt sauce, crumbled feta, and crisp lettuce on soft pita bread. Zimi, Carmencita, & Neogal are available exclusively at Welbee’s Supermarkets.
Ingredients: (4 portions)
1pkt Carmencita Barbacoa Seasoning
600g-800g Fresh Chicken Breast
1tub Neogal 0 Fat Greek Yoghurt
Juice of 1/2 Lemon
1-2 Garlic Cloves (minced)
Ground Pepper
1tsp Fresh Parsley (finely chopped)
4 Zimi Pita Bread
100g Neogal Feta Cubes
Fresh Lettuce
Method:
Start with the chicken. Place the it in the bag, and add the seasoning as instructed on the packet.
Close it well and place it onto a baking tray.
Bake at 180° for about 40 minutes. Do not use the oven fan or grill when using baking bags.
When it’s ready remove it from the bag and allow it to cool down. Cut into strips.
While the oven is still hot, warm up the pita bread onto a baking tray for about 5 minutes.
To make the sauce simply add the minced garlic and lemon juice to the greek yoghurt.
Mix well, and finish it off with parsley and freshly ground pepper.
To assemble the gyros, simply spread a tablespoon of the yoghurt sauce onto the pita bread.
Add a healthy amount of fresh lettuce, sliced chicken and feta cubes.
Drizzle some more sauce on top and fresh parsley, fold and enjoy!
