Crayfish Boil with Maltese Sausage

Ingredients:
2tsp Salt
2tsp Cajun Seasoning
1tsp Fish Seasoning
1tsp Paprika
1tsp Mixed Peppercorns
5 Bay Leaves
1.5ltr Water
500g Red Potatoes
2 Onions
1 Garlic Bulb (top part removed)
400g Maltese Sausage
300g Mushrooms
2 Sweet Corn Cobs
1 Lemon
500g Crayfish (we are using pre-cooked frozen crayfish)
Directions:
1. In a large pot place, all the seasonings and water and gently bring to a boil.
2. Once the boiling temperature is reached, add potatoes, onions, and garlic and boil for 10 minutes.
3. Add sausage, mushrooms, sweet corn and squeeze the lemon. Then add it to the soup base. Boil for further 5 minutes.
4. Add the crayfish. Note that if you’re using pre-cooked frozen crayfish you just need to simmer for 5 minutes. If it's raw, boil for 5 minutes then simmer for another 2 minutes.
