Nut-Crusted Salmon
Juicy salmon fillets with a herb and nut crust.
Ingredients (serves 2)
2 Salmon Fillets
100g Mighty Mixed Nuts
50g Lamb Brand Panko Breadcrumbs
1tbsp Mixed Herbs or Fresh Parsley (finely chopped)
1tbsp Mayonnaise
1pkt Lamb Brand Kuskus (any flavour)
Ista Marinated Pepper Fillets (to serve)
Salt & Pepper (to taste)
Method:
Chop the nuts in a food processor or blender.
Add the panko and herbs and mix well.
Place the salmon fillets on a baking tray lined with baking paper.
Brush them with the mayonnaise, then drizzle generously with the nut mixture.
Bake in a preheated 200°c for 14 - 20 minutes.
In the meantime, prepare the kuskus as indicated on the packet.
Serve the salmon with the kuskus and marinated pepper fillets.
