Maltese Sausage Tacos

Crispy fried Maltese sausage with egg, taco seasoning, salsa, and gooey cheese enclosed in a crunchy tortilla. 


Ingredients (for 2)

  • 1/2tsp Oil

  • 1 Small Shallot (finely chopped)

  • 1 Maltese Sausage (chopped, casing removed)

  • 1/2 Red Pepper (finely chopped)

  • 2 Fresh Eggs

  • 1/2tsp La Fiesta Taco Seasoning Mix

  • 200g Cheddar Cheese Mix (grated)

  • 2 La Fiesta Flour Tortillas (small size)

  • 2tbsp La Fiesta Salsa Dip


Method:

  1. Ideally done one at a time, these tacos only require 6 minutes to make.

  2. Fry the Maltese sausage in little oil in a non-stick skillet over a medium heat.

  3. When the meat turns brown, add the onion and continue to cook for a couple of minutes.

  4. Add the pepper and cook for 30 seconds, stirring frequently.

  5. Scoop the ingredients to the centre to create a circle and crack an egg in the middle.

  6. You can leave the yolk whole, or scrambled as you prefer. 

  7. Sprinkle some taco seasoning on top followed by a good amount of cheese.

  8. Place a tortilla on top and continue to cook for another couple of minutes until the egg is cooked and the cheese has melted.

  9. Gently flip the tortilla, and lower the heat.

  10. Add some salsa on top and cook for about a minute until the taco becomes nice and crispy.

  11. Gently fold the tortilla on itself and press down with a spatula until it hold its shape.

  12. Serve immediately ideally with some crunchy tortilla chips if you like.
