Roasted Aubergine
This is one of my favourite aubergine dishes. Simple, easy to make and really tasty. Perfect for those Summer dinners.
Ingredients: (serves 2)
1 Large Aubergine
4 medium Potatoes
2 medium Onions
1-2 Garlic Cloves (minced)
1tbsp Olive Oil
2pkts Dunia Tuna In Olive Oil
Ista Artichokes
Ista Olives
1tbsp Salted Butter
Salt & Pepper to Taste
Fresh Maltese Bread to Serve
Method:
Wash well the aubergine, and the potatoes and place them in a baking dish together with the onions. Do not peel them.
Prick the potatoes and the aubergine with a fork. This will let out steam and prevent them from exploding.
Bake at 200°c for 45 minutes to an hour. This depends on the sizes of the vegetables. Prick them with a toothpick after 45 minutes to see if they are soft throughout.
Let the aubergine rest for 10 minutes, then carefully make a cut using a knife and remove the pulp with a spoon.
Add the minced garlic and the olive oil and mash everything together with a fork. Season with salt and pepper.
Cut the potatoes and place some butter in between to melt.
Peel the onions and serve together with tuna, and delicious marinated olives and artichokes.
Don’t forget that crunchy Maltese bread for dipping in the roasted aubergine!
