Cisk Rabbit

This is a different way to enjoy a delicious rabbit stew. You can use any kind of your favourite beer.

Ingredients:

  • 1kg Rabbit (pieces)

  • 150g Plain Flour

  • 1tsp Salt

  • 1tsp Black Pepper

  • 1tsp Garlic Powder

  • 1tsp Paprika

  • 3tsp Vegetable Oil

  • 2 Large Onions

  • 10 Garlic Cloves

  • 200g Smoked Maltese Sausage

  • 200g Mushrooms

  • 1tsp Thyme

  • 3 Bay Leaves

  • 2cans Cisk Lager (or any kind of beer)

  • 300ml Chicken (or vegetable) Stock

Directions:

  • 1. In a small bowl mix together flour, salt, pepper, garlic powder and paprika.

  • 2. Coat the rabbit pieces with the flour mixture and brown it in a large pot using 3 teaspoons of vegetable oil.

  • 3. Remove the rabbit and add the onions to the same pot.

  • 4. Sweat the onions for about 5 minutes then add the garlic cloves (whole), Maltese sausage, mushrooms and thyme. Stir well.

  • 5. Season with salt & pepper and gently fry for around 5 minutes.

  • 6. Add 2 cans of Cisk & bay leaves.

  • 7. Add back the rabbit pieces and chicken stock and bring to a boil.

  • 8. Lower the heat, cover and simmer for at least an hour and a half.

  • 9. Enjoy!
