Cisk Rabbit

Ingredients:
1kg Rabbit (pieces)
150g Plain Flour
1tsp Salt
1tsp Black Pepper
1tsp Garlic Powder
1tsp Paprika
3tsp Vegetable Oil
2 Large Onions
10 Garlic Cloves
200g Smoked Maltese Sausage
200g Mushrooms
1tsp Thyme
3 Bay Leaves
2cans Cisk Lager (or any kind of beer)
300ml Chicken (or vegetable) Stock
Directions:
1. In a small bowl mix together flour, salt, pepper, garlic powder and paprika.
2. Coat the rabbit pieces with the flour mixture and brown it in a large pot using 3 teaspoons of vegetable oil.
3. Remove the rabbit and add the onions to the same pot.
4. Sweat the onions for about 5 minutes then add the garlic cloves (whole), Maltese sausage, mushrooms and thyme. Stir well.
5. Season with salt & pepper and gently fry for around 5 minutes.
6. Add 2 cans of Cisk & bay leaves.
7. Add back the rabbit pieces and chicken stock and bring to a boil.
8. Lower the heat, cover and simmer for at least an hour and a half.
