Soppa tal-Armla (Widow's Soup)
Ingredients:
2tsp Olive Oil
1 Onion
3 Garlic Cloves
2 Carrots
200g Potatoes
200g Kohlrabi
100g Courgette
70g Broad Beans
250g Cauliflower
300g Chopped Tomatoes
1 Celery Stalk
1tbsp Celery Leaves
2tbsp Tomato Paste
1litre Vegetable Stock
50g Frozen Peas
2 Goat's Milk Cheeselets (Ġbejniet)
2 Eggs
Directions:
1. In a saucepan add olive oil and gently fry the onion and garlic for about 5 minutes.
2. Then add carrots, potatoes, celery, broad beans, tomatoes, tomato paste, kohlrabi, courgette and about a liter of vegetable stock.
3. Give it a mix and bring to a boil. Then cover, lower the heat and simmer for 30 minutes.
4. Uncover, add peas, cheeselets, and eggs and cover again.
5. Cook for 15 minutes or until the eggs have settled.
6. Serve with loads of Maltese Bread and enjoy this warm healthy Maltese delicacy!
