Soppa tal-Armla (Widow's Soup)

Probably it’s Malta’s favorite soup!

 

Ingredients:

  • 2tsp Olive Oil

  • 1 Onion

  • 3 Garlic Cloves

  • 2 Carrots

  • 200g Potatoes

  • 200g Kohlrabi

  • 100g Courgette

  • 70g Broad Beans

  • 250g Cauliflower

  • 300g Chopped Tomatoes

  • 1 Celery Stalk

  • 1tbsp Celery Leaves

  • 2tbsp Tomato Paste

  • 1litre Vegetable Stock

  • 50g Frozen Peas

  • 2 Goat's Milk Cheeselets (Ġbejniet)

  • 2 Eggs

Directions:

  • 1. In a saucepan add olive oil and gently fry the onion and garlic for about 5 minutes.

  • 2. Then add carrots, potatoes, celery, broad beans, tomatoes, tomato paste, kohlrabi, courgette and about a liter of vegetable stock.

  • 3. Give it a mix and bring to a boil. Then cover, lower the heat and simmer for 30 minutes.

  • 4. Uncover, add peas, cheeselets, and eggs and cover again.

  • 5. Cook for 15 minutes or until the eggs have settled.

  • 6. Serve with loads of Maltese Bread and enjoy this warm healthy Maltese delicacy!
