4 Cheese Froġa tat-Tarja

Ingredients:
- 400g Capellini Pasta (tarja) 
- 150g Mozzarella 
- 50g Grated Pecorino Cheese 
- 200g Fresh Goat's Cheese 
- 50g Feta Cheese 
- 3 Eggs 
- 2tbsp Fresh Parsley 
- Salt & Pepper 
- 1tsp Olive Oil 
Directions:
- 1. In a small bowl combine the eggs, pecorino, parsley, salt & pepper. Mix well. 
- 2. Cook the pasta as instructed and let it cool. 
- 3. Add the egg mixture to the pasta and combine well. 
- 4. In a separate bowl combine the mozzarella, goat's cheese and feta together. 
- 5. Heat well an oven proof deep frying pan or a cast iron one. 
- 6. Put half of the pasta mixture in the pan and top it with the cheese mixture. 
- 7. Add the remaining pasta mixture, cover and fry gently for about 8 minutes. 
- 8. Uncover and place in a hot 220°c oven and cook until golden. This should take around 15 minutes. 
- 9. Flip onto a serving tray and cut into portions. 
- 10.
