Biskuttini tar-Raħal - Village Biscuits

Ingredients:

  • 3 Large Eggs

  • 125g Granulated Sugar

  • 125g Brown Sugar

  • 1/4tsp Vanilla Essence

  • 450g Plain '00' Flour

  • 1tbsp Crushed Anise Seeds

  • 1tbsp Ground Aniseed

  • 1/2tsp Ground Cinnamon

  • 1/4tsp Ground Cloves

  • 1 1/2tsp Baking Powder

  • Grated Zest of 1 Orange

  • Grated Zest of 1 Lemon

  • A Pinch of Salt

For Decoration

  • Sugar Pearls

  • Ready-Made Icing

    or

  • 250g Icing Sugar

  • 1egg white

  • 1tsp Lemon Juice

  • Food Colouring



Directions:

  • 1.Using a mixer beat together the eggs, sugars and vanilla essence.

  • 2.Lightly crush the anise seeds. In a separate bowl combine together the flour, anise seeds, ground aniseed, cinnamon, cloves, baking powder, orange and lemon zest and a pinch of salt.

  • 3.Add them to the egg mixture and mix until you get a sticky dough.

  • 4.With lightly wet hands form into small balls and place them on a baking sheet lined with baking paper leaving at least 6cms between each other. Wetting your hands make the job easier.

  • 5.Bake in a pre-heated 230°c oven for about 10 minutes. Or until nicely puffed and lightly browned.

  • 6.Let them cool on a cooling rack completely before decorating.

  • 7.If you buy ready-made icing just create swirls of icing and place a sugar pearl in the centre.

  • 8.If you want to make the icing yourself just pass the icing sugar through a sieve, add the egg white and lemon juice, and mix together until creamy. Then add the colouring of your choice and mix well.

  • 9.Place in a piping bag and decorate.
