Ġibniet Turkey Involtini

Ingredients:
200g Ħanini Ġibniet Friski
4 Slices Turkey Breast (Chicken is good as well)
4 Slices Speck
100g Cooked Spinach
1 Egg Yolk
Salt & Pepper
1tsp Olive Oil
1tsp Butter
Directions:
1.Slice the turkey breast into thin slices. Or buy ready-made.
2.Discard the water in the ġibniet (ideally place them in a sieve for at least an hour)
3.Crumb the cheese in a small bowl, add the egg yolk, and season to taste. Mix well.
4.Now place a slice of turkey meat, followed by a slice of speck. Add a tablespoon of cheese and spread it. Then put some cooked spinach. We are using frozen spinach for this recipe.
5.Roll the turkey breast and secure with a skewer.
6.Fry in some oil and butter for about 3 minutes on each side then finish in a hot oven. About 20 minutes.
7.You can add some chicken stock before placing them in the oven to moisten them more.
