‘TikTok’ Feta Pasta - Maltese Style

Ingredients:
400g Cherry Tomatoes
150g Broad Beans (peeled)
150g Maltese Sausage
3 Garlic Cloves
40ml Extra Virgin Olive Oil
200g Feta Cheese
1/4tsp Chilli Flakes
400g Cooked Orechiette Pasta (or any other short pasta)
Fresh Basil
Salt & Pepper
Directions:
1.In a baking dish or cast-iron skillet combine the cherry tomatoes, broad beans, Maltese sausage (removed from casing) and garlic.
2.Add half of the oil and mix well.
3.Make some space in the centre and place the feta cheese. Drizzle the remaining oil on top of it.
4.Season with salt, pepper and chilli flakes.
5.Bake in a preheated 200°c oven for 35 minutes until the tomatoes get soft and the cheese is lightly browned.
6.While it's baking, cook the pasta in salted boiling water until it gets 'al dente'
7.Remove the feta cheese mix from the oven and carefully squash the tomatoes with the back of a wooden spoon. Then mix everything together to get the creamy sauce.
8.Drain the pasta and add it to the sauce, add a bunch of chopped basil and mix well.
9.Serve immediately.
