Qassatat tal-Irkotta u Ful

Qassatat are Traditional Maltese dough parcels normally filled with cheese or a mushy pea mixture.

Ingredients:

Dough:

  • 600g Plain Flour

  • 300g Stork Margarine

  • 5tbsp Cold Water

  • 1/2tsp Salt

Filling

  • 350g Ħanini Irkotta 

  • 70g Fava Beans (canned)

  • 20g Golden Raisins (optional)

  • 2 Eggs

  • Salt & Pepper

Directions:

  • In a food processor mix the flour with the margarine until it gets crumbly.

  • Add the salt and start adding the water until you see the dough coming together.

  • Transfer it to a floured surface and knead it until it gets smooth and solid.

  • Wrap in plastic and refrigerate for at least half an hour.

  • Mix the filling ingredients together and transfer them to a piping bag.

  • Open the dough and cut the qassatat using a cake cutter or a plate. I used a 20cm one.

  • Pipe the filling in the centre and brush the edges with some water.

  • Start folding the dough gently to create little parcels.

  • Transfer them on a baking tray lined with baking paper.

  • Continue filling the parcels until they are well filled with the irkotta mixture.

  • Bake in a preheated 180°c oven for about 30mins or until golden brown.
