Maltese Sausage & Mushroom Paccheri

Directions:
Start by bringing a large pot of salted water to a boil and add the paccheri. Cook them a minute less their due time so we finish them in the sauce. In the meantime, we can prepare the sauce.
Chop the onion and fry it in some olive oil over a medium-high flame until it softens.
Remove the skin from the Maltese sausage and spread it over the onion.
When the sausage is cooked, add the mushrooms and season with salt and pepper.
Add the wine and let it evaporate stirring frequently.
When it’s all absorbed, add the cream.
Lower the flame and add the Pecorino.
Add the paccheri and cook for another minute, stir and plate.
