Egg Hollandaise Sandwich

Ingredients:
2 Hard Boiled Eggs
1tbsp Maille Hollandaise
Tramezzini Bread
Sliced Cheese
Spring onion
Lettuce
Salt & Pepper
Paprika
Directions:
Slice the eggs in half and remove the yolk.
Chop the egg white into chunks and set aside.
In a small bowl, crumble the egg yolks, then add the Hollandaise, spring onion, dash of paprika, salt & pepper. Mix them up into a thick creamy paste.
Add the egg whites and combine well, but avoid from crumbling the whites. It gives it a nice texture.
Place some lettuce and the cheese onto the bread, add some of the egg mixture and close the sandwich. That easy!
Cut it and serve.
