Ġibna Couscous Fritters

Crispy on the outside, soft and on the inside. These couscous ġibniet fritters are delicious and so easy to make!

Ingredients:

  • 1 Red Bell Pepper

  • 1 Shallot

  • 1-2 Dry Ġibniet (unflavoured)

  • Fresh Mint leaves

  • 2 Bags (200g) Tipiak Boil-in-Bag Express Couscous

  • Chicken Stock Cube (use a vegetable cube instead to make it vegetarian)

  • 2 Eggs

  • Salt & Pepper

  • Vegetable Oil for Frying

Directions:

  • 1.Finely chop the bell pepper, shallot, ġibniet, and mint and set aside.

  • 2.Bring a pot of water to a boil, place a chicken stock cube and when it's dissolved add 2 bags of couscous.

  • 3.Boil for 90seconds and pull the bags out of the water using a fork.

  • 4.Carefully open them in a bowl and fluff the couscous up. It should be perfectly cooked.

  • 5.Let it cool a bit before adding the following ingredients.

  • 6.Add the chopped ingredients, add 2 eggs, season to taste, and mix well until everything is well combined.

  • 7.Take a tablespoon of the mixture and shape it into an elongated sphere.

  • 8.Be very gentle as they are very fragile.

  • 9.Carefully drop them into hot oil (170°c)

  • 10.Fry into small batches to keep the oil temperature high.

  • 11.After about 15 seconds they will be strong enough to stir them around to avoid sticking to the pan.

  • 12.Fry for about 5 minutes or until golden brown and crispy.

  • 13.Dry them on a kitchen towel and serve them with your favourite sauce, vegetables, or salad.

  • 14.Can be eaten warm or cold and can also be frozen.
