Garlic Honey Pork Belly

Ingredients:
500g Pork Belly
2tbsp Olive Oil
20 Garlic Cloves
1/2tsp Fennel Seeds
2tbsp Honey
1tsp Apple Vinegar
A handful of Fresh Basil
Salt & Pepper to taste
Directions:
1. In a hot skillet fry pork belly in olive oil for 5 minutes per side on medium/high heat. Season well with salt & pepper.
2. Add garlic cloves, fennel seeds, honey, and vinegar and continue for further 5 minutes. Mix frequently.
3. Lower heat, add basil, cover and simmer for 20minutes.
4. Uncover and continue cooking for another 5 minutes.
5. Serve with mashed potato.
6. Enjoy!
