Balbuljata tal-Bulibif

Traditionally, Balbuljata is an easy-to-make Maltese dish made based on simple ingredients with just onion, tomatoes, and eggs.

This is ChEAT’s version based on the traditional dish

with potatoes, green pepper, and corned beef.

 

Ingredients:

  • 1tbsp Olive Oil

  • 1 medium-size Onion

  • 2 cloves of Garlic

  • 1 medium-size Potato

  • 2tbsp Water

  • 300g Tomatoes

  • 1 Green Pepper

  • 500g Corned Beef

  • 200g Tomato Sauce (Sugo or Polpa)

  • 2tbsp Fresh Basil

  • 3 Eggs

  • Salt & Pepper to taste

Directions:

  • 1. On a medium heat start by frying onion and garlic in olive oil until onion becomes transparent.

  • 2. Add cubed potato and some water and cook for around 4 minutes stirring occasionally.

  • 3. Add tomatoes and cook for another 3-4 minutes.

  • 4. Add diced green pepper and corned beef and mix well.

  • 5. Add seasoning and tomato sauce and cook for a couple of minutes.

  • 6. Lower the heat and add the beaten eggs.

  • 7. Stir until the eggs are fully cooked and add the basil.

  • 8. Serve with some grated cheese and enjoy :)
