Ingredients:

  • 1kg Pork Belly with skin

  • 1tsp Smoked Paprika

  • 1tsp Oregano

  • 1tsp Salt

  • 1tsp Brown Sugar

  • 1tsp Ground Cumin

  • 1tsp Onion Powder

  • 1tsp Garlic Granules

  • 1tsp Chinese 5 Spices

  • 1/2tsp Turmeric

  • 1/4tsp Cayenne Pepper

  • 1/4tsp Ground Black Pepper

  • White Vinegar

  • Borges Extra Virgin Olive Oil

Directions:

  • 1.Flip the pork belly skin side down and make deep cuts (about 3cm) in a square pattern. This will help the dry rub to penetrate the meat and to make it easier to slice when it's cooked.

  • 2.Combine all the spices together and rub the underside of the meat. Do not rub the skin and keep it as clean as possible.

  • 3.Place the pork in a roasting dish skin facing upwards and clean it well with a kitchen towel.

  • 4.Sprinkle some salt on top and rub it well. This will help to remove moisture from the skin. The dryer it is, the crispier it will get.

  • 5.Place the pork uncovered in a fridge for at least an hour.

  • 6.Pat dry the skin again for any moisture that came out and lightly coat it with white vinegar. This will help it to dry even further while roasting.

  • 7.Place the dish in a preheated oven and slowly roast at 200°c for about an hour.

  • 8.Remove from the oven and turn the oven to 250°c.

  • 9.Brush a light layer of olive oil on the skin and when the oven reaches the temperature place the dish inside.

  • 10.Roast for about 20 minutes or until the skin gets all puffed up nicely. Keep an eye because once it puffs up, it might get dark pretty quickly.

  • 11.Chop into portions and serve with noodles or potatoes.
