Laħam fuq il-Fwar bil-Patata

Steamed minute steak is a Maltese favourite. Simple and delicious. Traditionally cooked on top of a pot of soup or chicken broth and made with parsley and green garlic.

Ch-EAT's recipe includes potatoes and garlic cloves, but that's entirely up to you.

Ingredients:

  • 500g Minute Steak (laħam tal-friża)

  • 200g Potatoes

  • 4 Green Garlic Stalks

  • 4 Garlic Cloves (optional)

  • A handful of Fresh Parsley

  • Extra Virgin Olive Oil

  • Salt & Pepper

Directions:

  • 1.Peel and chop potatoes into large chunks and place them in a round dish that fits on top of your pot.

  • 2.Chop the garlics and parsley and place some of each on the potatoes.

  • 3.Season to taste and put some E/V Olive oil.

  • 4.Cover the potatoes with the minute steak and repeat with the toppings.

  • 5.Add about 4 tablespoons of water. This will create steam and gravy.

  • 6.Tightly seal the dish with aluminium foil. Ideally 2 layers of foil.

  • 7.Bring a pot of water (or soup) to a boil and slowly simmer for about an hour.

  • 8.Serve immediately. You can also squeeze some lemon.
