Easy Crispy Pork Belly

Ingredients:
1kg Pork Belly with skin
1tsp Smoked Paprika
1tsp Oregano
1tsp Salt
1tsp Brown Sugar
1tsp Ground Cumin
1tsp Onion Powder
1tsp Garlic Granules
1tsp Chinese 5 Spices
1/2tsp Turmeric
1/4tsp Cayenne Pepper
1/4tsp Ground Black Pepper
White Vinegar
Borges Extra Virgin Olive Oil
Directions:
1.Flip the pork belly skin side down and make deep cuts (about 3cm) in a square pattern. This will help the dry rub to penetrate the meat and to make it easier to slice when it's cooked.
2.Combine all the spices together and rub the underside of the meat. Do not rub the skin and keep it as clean as possible.
3.Place the pork in a roasting dish skin facing upwards and clean it well with a kitchen towel.
4.Sprinkle some salt on top and rub it well. This will help to remove moisture from the skin. The dryer it is, the crispier it will get.
5.Place the pork uncovered in a fridge for at least an hour.
6.Pat dry the skin again for any moisture that came out and lightly coat it with white vinegar. This will help it to dry even further while roasting.
7.Place the dish in a preheated oven and slowly roast at 200°c for about an hour.
8.Remove from the oven and turn the oven to 250°c.
9.Brush a light layer of olive oil on the skin and when the oven reaches the temperature place the dish inside.
10.Roast for about 20 minutes or until the skin gets all puffed up nicely. Keep an eye because once it puffs up, it might get dark pretty quickly.
11.Chop into portions and serve with noodles or potatoes.
