Fried Ice-Cream Sandwich

Ingredients:
1 Tub Vanilla & Pistacchio Barattolino Sammontana Ice-Cream.
8 Slices Tramezzini Bread (or normal sliced bread with the crust trimmed off)
3 Eggs
100ml Whole Milk
1/2tsp Vanilla Extract
1/4tsp Salt
200g Bread Crumbs
200g Panko Bread Crumbs
2tbsp Sugar
1tsp Cinnamon
Directions:
1.Place a slice of bread on a clean working top and gently flatten it using a rolling pin.
2.Place one scoop of ice-cream in the centre and close the sandwich with another flattened slice of bread.
3.Using the rolling pin and your fingers, pinch the sides tightly.
4.Place the sandwiches on a tray, cover them and freeze them for at least 2 hours.
5.In a bowl combine the eggs, vanilla, salt and milk and whisk well.
6.Dip each sandwich in the egg mixture making sure to cover all the surface. Then coat them with bread crumbs. Make sure to coat them well to create a good seal. Otherwise the ice-cream will escape!
7.At this point you can fry them like this but to make them extra crispier freeze them again for 2 hours.
8.Then pass them through the egg mixture and panko bread crumbs.
9.In the meantime make sure to have a pot of hot oil and fry from both sides until they are golden brown.
10.Combine the sugar and cinnamon together and serve the sandwiches piping hot. Sprinkle the cinnamon sugar on top and enjoy!
