Chicken Tortilla Cones

These simple delicious tortilla cones are great for a quick snack, lunch or a party. 


Ingredients for 6 cones: 


Method:

  1. Start with the chicken, cut it into little cubes and fry it in the olive oil until it starts turning golden.

  2. Add the onion and bell pepper and continue to cook stirring frequently until the onion is soft and translucent.

  3. Sprinkle the spice mix and incorporate it well with the other ingredients. 

  4. Cook for a couple of minutes and check for saltiness. 

  5. To combine the cones, cut the tortilla in half.

  6. Brush half of each part with the BBQ sauce.

  7. Place a couple of tablespoons of the chicken mix.

  8. Grate the cheddar and place some onto the chicken.

  9. Finish it off with a couple of slices jalapeno.

  10. To roll them, place your index finger in the centre of the straight side of the tortilla, and carefully grab the end of the tortilla and fold it over and keep rolling towards the plain part of the tortilla.

  11. Place them carefully in a deep oven-proof bowl, and if there’s any left fill them to the brim with more chicken and cheese. 

  12. Bake them in a preheated 200°c oven for about 10 minutes or until they are piping hot and lightly brown.

  13. Sprinkle some finely chopped parsley and serve.
