Xgħir il-Forn (baked barley)

Ingredients:
300G Pearl Barley
1/2tsp Salt
600ml Water
1tbsp Borges Olive Oil
1 Onion
1 Carrot
500g Pork & Beef Mince
1tbsp Tomato Purée (kunserva)
1/2tsp Sugar
1/2tsp Curry
200g Passata di Pomodoro
1cube Chicken Stock
50g Parmesan
50g Mozzarella
3 Eggs
Salt & Pepper
Directions:
1. Wash the barley until the water runs clear. Place in a pot with 600ml of water and half a teaspoon of salt.
2. Bring to a boil then simmer for 15 minutes or until the water evaporates. Set aside to cool down.
3. Add 1 teaspoon of olive oil in a saucepan and fry the onion until it gets translucent. Add the carrot, meat and season to taste. Fry for about 5 minutes then add the tomato purée, sugar, curry, passata and the chicken cube.
4. Stir well and simmer gently for 20 minutes.
5. Add the boiled barley to the sauce, parmesan, mozzarellla and the eggs.
6. Mix well and place them in a greased baking dish. Top it with parmesan and fresh ground pepper.
7. Bake in a 220°c for about 45 minutes or until it is nicely golden brown.
8. Rest for 10 mins and serve.
