Veggie Feta Pasta
Ingredients for 2 servings:
400g Fusilli or Orecchiette Pasta
100g Cherry Tomatoes
200g Emborg Greek Style Cheese Portion or Feta Cheese
1 Packet Emborg Frozen Garden Mix
1/2tsp Chilli Flakes
Fresh Parsley (finely chopped)
Salt & Pepper to Taste
Method:
Place the feta cheese in the centre of a deep oven dish.
Place the cherry tomatoes and the frozen veggies around it and drizzle with the olive oil.
Sprinkle the chilli flakes on top of the feta cheese and bake in a moderate oven for about 30 minutes, or until the veggies are cooked and the feta starts to melt.
While the vegetables are in the oven, cook the pasta ‘al dente’ in plenty of salted water.
Mix the vegetables well with the feta cheese creating a sauce, then add the pasta to it.
Add some pasta water for a creamier texture.
Salt and pepper to taste, drizzle with freshly chopped parsley and serve.
