Vegetarian Meatball Subs
Ingredients for 4 portions.
4 Sub Rolls or Baguettes
400g Emborg Shredded Mozzarella
Marinara Sauce:
1tsp Olitalia Olive Oil
250g Tomato Sauce
1 Yellow Onion (finely chopped)
1tsp of Balsamic Vinegar
2 Garlic Cloves (minced)
1tbsp Tomato Paste
1/2tsp Oregano
1/4tsp Crushed Chili
Fresh Basil Leaves
Method:
Add a teaspoon of olive oil in a hot skillet and fry the meatballs from frozen, for about 5 minutes to give them some colour. Remove and set aside.
Prepare the Marinara sauce in the same skillet by simply frying the onion and garlic in the olive oil for about 5 minutes.
Add the the tomato sauce, tomato paste, balsamic, oregano, and the crushed chili and bring it to a gentle boil, then let it simmer on a low flame for at least half an hour until it thickens.
Place the meatballs in the Marinara sauce and let them simmer for a few minutes until the meatballs are cooked through.
Cut the rolls in half lengthwise and place them on a baking sheet.
Spoon the meatballs and sauce onto the prepared sub rolls or baguettes.
Sprinkle shredded mozzarella cheese over the meatballs.
Place the assembled meatball subs under a grill for about 3 minutes until the cheese is melted and bubbly.
If you don’t have a grill, a hot oven will work just as fine.
Serve hot and enjoy your delicious meatball subs!
