Truffle Croque-Monsieur Ftira

Classic comfort meets gourmet flair in this croque-monsieur, elevated with truffle and black pepper cheddar, served with crunchy ftira. Delicious!


Ingredients: (serves 2)

  • 1 Maltese Ftira

  • 2tbsp Butter

  • 2tbsp Plain Flour

  • 50ml Milk (warm or room temperature)

  • 60–80g Edrini Truffle & Black Pepper Cheddar (grated)

  • 2–4 slices Cooked Ham

  • 4 Slices Cheddar Cheese

  • 1tbsp Dijon Mustard

  • A pinch of Nutmeg

  • Salt & Pepper (to taste)


Method:

  1. Let’s start with the béchamel. In a small saucepan, melt the butter then add the flour and whisk well to form a smooth paste (roux). 

  2. Gradually add the milk a little at a time, whisking constantly to avoid lumps.

  3. Once smooth, add the remaining milk.

  4. Bring gently to a simmer, stirring continuously. Add the nutmeg and some salt & pepper.

  5. Finally, add the grated truffle cheddar and cook for 3–5 minutes until thick and smooth. If it gets too thick, add a little more milk.

  6. Cut the ftira in half and spread the mustard.

  7. Add a layer of the béchamel, the ham, and the cheddar on top.

  8. Add another layer of béchamel and close.

  9. Fry the ftira gently in some butter in an ovenproof skillet (like cast iron) then add the remaining béchamel on top, and some more truffle cheddar.

  10. Bake in a preheated 200°c oven for about 10 minutes, then turn on the frill for another 2-3 minutes. Keep an eye not to burn it. 

  11. Serve immediately.
