Maltese Sausage Tortellini in Brodo

Delicate tortellini filled with Maltese sausage and Parmesan, served in a light, flavourful broth. This comforting dish combines rich, savoury filling with a simple, warming soup, perfect for a cosy meal.


Ingredients:

Filling:

  • 200g Maltese Sausage (skin removed)

  • 40g Parmesan Cheese (grated)

  • 1 Fresh Egg

  • Freshly Ground Black pepper (to taste)

Pasta:

  • 200g Plain Flour

  • 1tsp Knorr Aromat Garlic Flavour

  • 2 Fresh Eggs

Brodo (broth):

1 litre Knorr Mamma Che Brodo! Beef Broth

1 Garlic Clove (whole)

Small onion (whole)

1/2 Celery Stick


Method:

  1. Mix sausage, Parmesan, egg, and pepper until combined.

  2. For the pasta, combine flour, seasoning, and eggs, knead until smooth, then rest for 20–30 minutes wrapped in clingfilm.

  3. Roll out thin sheets and cut into small squares of the desired size. Normally it’s 3-4cm.

  4. Add a little filling, fold into tortellini shapes.

  5. Simmer the stock with garlic, celery and onion for extra flavour for about 10 minutes.

  6. Discard the vegetables.

  7. Cook tortellini in the broth for 3–5 minutes until they float and are cooked through.

  8. Serve hot in the broth with extra Parmesan if desired.
