Cheesy Crispy Veggies

Easy to make delicious cheesy vegetable chips. Great as a snack or side dish.
Ingredients:
1 Eggplant (ideally long)
2 Zucchini
2pkts Maggi Air-Fryer Cheesy Crispy Chicken Mix
2 Fresh Eggs
Method:
Wash well, and slice your vegetables into a 1cm disc.
Whisk the eggs into a small bowl.
Place the Maggi mix into a separate bowl. Yes, it’s for chicken, but don’t just stop at that!
The packet says you just need some oil. We are using eggs as a binder to give the vegetables more flavour, and add some protein.
Dip the vegetables into the egg, then pass them through the Maggi mix.
Place them into the air fryer next to each other.
Air fry for 10 mins and 180°c.
You can experiment with other vegetables too like cauliflower. It’s important to steam/boil a little before using it, so it will cook well.
