Sweet Chili Crispy Rabbit
Crispy rabbit strips placed with an asian flavoured sweet chili sauce.
Ingredients: (serves 2)
500g Rabbit Belly Meat (sliced)
½ tsp Garlic Granules
30g Cornflour (or all-purpose flour)
1 Fresh Egg (beaten)
Salt & Pepper (to taste)
Vegetable Oil for Frying
Sweet Chilli Sauce:
2 tbsp Exotic Food Sweet Chili Sauce
½ tbsp Soy Sauce
½ tbsp Honey
½ tsp Rice Vinegar
½ tsp Sesame Oil (optional)
1 Garlic Clove (minced)
1 tsp Ginger (grated)
½ Red Chili (finely chopped)
Garnish:
1 Spring Onion (finely chopped)
1 tsp Sesame Seeds
Red Chili (sliced)
Steamed Rice or Noodles
Method:
Pat the rabbit pieces dry and season with salt, pepper, and garlic powder.
Dip each piece into the beaten egg, then coat with cornstarch (or flour).
Fry the rabbit pieces for 4-6 minutes, until golden brown and crispy.
Drain on paper towels.
For the sauce, heat sesame oil over medium -low heat in a large pan.
Sauté garlic, ginger, and chopped red chilli for 30 seconds.
Mix the sweet chilli sauce, soy sauce, honey, and vinegar. In a small bowl and add them to the saucepan. Stir well.
Simmer for 1-2 minutes until slightly thickened on a low flame.
Toss the crispy rabbit pieces in the sauce until evenly coated.
Serve on a bed of noodles or rice, and garnish with spring onions, sesame seeds, and extra sliced chili.
