Parmesan Baked Kataifi

Soft kataifi noodles infused with Parmesan egg, baked with vegetables, ham and plenty of gooey cheese! 


Ingredients: (serves 4)

  • 4 Fresh Eggs

  • 50g Carrefour Parmigiano Reggiano (grated)

  • 250g Zimi Kataifi (chopped)

  • 200g Mozzarella & Cheddar Mix (grated)

  • 100g Cherry Tomatoes (chopped)

  • 100g Zucchini (cubed)

  • 50g Carrefour Cooked Ham Cubes (or pancetta)

  • Salt & Pepper (to taste)

  • Fresh Parsley (finely chopped)


Method:

  1. Crack the eggs into a large bowl and add the Parmigiano and some parsley.

  2. Whisk well until you get a creamy consistency.

  3. Roughly chop the kataifi and add it to the bowl.

  4. Season with salt and pepper and mix well until all the kataifi is soaked with the egg mixture.

  5. Transfer half of the mixture to a baking dish lined with baking paper.

  6. Spread the tomatoes, zucchini, and ham on top and a layer of mozzarella & cheddar.

  7. Add the remaining kataifi mixture and finish with the rest of the mozzarella on top. 

  8. Bake at 200°c for about 25 minutes or until piping hot.

  9. Serve immediately.
