Marinated Octopus Poke Bowl
Create your own delicious poke bowl. Perfect lunch or snack for Summer.
Ingredients: (serves 2)
400g Cooked Octopus (or boil frozen octopus for 45 minutes)
1 tbsp Sesame Oil
1 tbsp Rice Vinegar (or lemon juice)
Β½ tbsp Honey
1 Garlic Clove (minced)
1 tsp Spring Onion (finely chopped)
Poke Bowl Base:
2 Bags Poke Rice - Boil in Bag (cooked and cooled)
2 tsp Rice Vinegar
1 tsp Sugar
Β½ tsp Salt
Toppings:
1 Avocado (optional)
50g Edamame
1 small Carrot (peeled, sliced)
100g Seaweed Salad (wakame)
2 tbsp Pickled Ginger
1 Spring Onion (chopped)
Sesame Seeds (toasted)
Sriracha Mayo (mix 2 tbsp mayo + 1 tsp sriracha)
Lime Wedges
Method:
In a bowl, mix soy sauce, sesame oil, rice vinegar, honey, garlic, and spring onion.
Add the sliced octopus, mix well, and let it marinate for at least 30 minutes.
Boil the rice as instructed and cool down a little. Mix rice vinegar, sugar, and salt into the warm rice.
Let it cool to room temperature.
Divide the rice into 2 bowls.
Arrange marinated octopus, avocado, edamame, carrot, seaweed, and pickled ginger on top.
Drizzle with extra marinade or sriracha mayo.
Sprinkle with spring onions, sesame seeds, and put a couple of lime wedges.
Serve immediately.
