Mixed Berry Cobbler, with Hazelnuts and Maltese Honey

This quick and easy mixed berry cobbler recipe is one of my favourites. It has this crunchy yet cakey texture and so quick and easy to make. Combine it with some vanilla ice cream and you have an irresistible dessert!

Ingredients

Fruit Mixture

  • 300g (1 pkt) Asiago Frutti di Bosco

  • 1tbsp Brown Sugar

  • 3tbsp Cornflour

  • 1/2tsp Cinnamon

  • 1tbsp Lemon Juice

  • 1tbsp Maltese Honey

  • A Pinch of Salt

Topping mix

  • 100g Caster Sugar

  • 100g Softened Butter or 'I Can't Believe'

  • 200g Plain Flour

  • 1tsp Baking Powder

  • 100ml Milk

  • 50g Roasted Chopped Hazelnuts

Directions:

  • 1. Place the frozen berries in a bowl.

  • 2. Add the brown sugar and mix.

  • 3. Mix the cornflour, cinnamon and salt together and add them to the berries.

  • 4. Mix well then add the lemon juice and honey. Mix and set aside.

  • 5. In a separate bowl combine the sugar and the butter.

  • 6. Add the flour and baking powder and mix well until you get a crumbly mixture.

  • 7. Add the milk, mix well then add the hazelnuts giving it a final mix. Leave some hazelnuts for the top.

  • 8. Butter a baking dish and put the berries inside.

  • 9. Top the berries with the topping mixture. You can put them in blobs or cover the entire surface.

  • 10. Finish with the leftover hazelnuts and some sugar.

  • 11. Bake in a preheated 180°c oven for about 35 minutes or until the top is a nice, crispy and lightly brown.

  • 12. Best served warm with plenty of vanilla ice cream.
