Ftira Għawdxija (Gozitan Ftira)

Ingredients:
Dough:
500g '00' Flour
2tsp Dry Yeast
1.5tsp Sugar
1tsp Salt
50ml Extra Virgin Olive Oil
300ml Lukewarm Water
2tbsp Semolina (to open the dough)
Toppings:
Olive oil
Onion
Tomato
Potato
Anchovies
Black Olives
Capers
Ground Pepper
Fresh Rosemary (or thyme)
Directions:
1. Mix all dry dough ingredients and slowly add water and oil until you get an elastic dough. Knead for 10 minutes, cover and let it rise for 2 hours.
2. Open dough with the help of semolina and brush with olive oil. Decorate it with your fresh toppings and flip the edges inwards.
3. Finish with rosemary and ground pepper and brush the edges with olive oil to give them a nice crust.
4. Bake in a preheated 250°c oven for around 25 minutes.
