Beer-Braised Meatless Sausages

Ingredients for 2 persons:
1 Packet Quorn Sausages
2 Onions (thickly sliced)
4 Garlic Cloves (whole)
1tbsp Can't Believe Butter
1tsp Olitalia E/V Olive Oil
200g Small Mushrooms
220ml Beer
Fresh Thyme
Salt & Pepper
Directions:
1. Add the olive oil to a skillet and turn the heat to medium.
2. Add the defrosted sausages and fry on each side until they get nicely browned and crisp.
3. Add the butter, onions and garlic.
4. Fry until the onion starts to caramelize stirring frequently. This can take around 10 minutes.
5. Add the whole mushrooms. Slice them if you're using larger ones or cut into quarters.
6. Season with salt and pepper.
7. Cook for a couple of minutes until the mushrooms start to take colour.
8. Gradually add the beer and bring to a gentle boil stirring frequently.
9. Add the fresh thyme and cover.
10. Lower the heat and simmer for at least 15 minutes or until the beer is almost evaporated leaving a nice thick glaze.
11. You can uncover it for the last minutes to help it evaporate more quickly.
12. Serve with roast or mashed potatoes.
