Beer-Braised Meatless Sausages

October is synonymous with beer and sausages. These vegetarian-friendly sausages are simply braised in beer with onion, mushrooms and fresh thyme.

Ingredients for 2 persons:

  • 1 Packet Quorn Sausages

  • 2 Onions (thickly sliced)

  • 4 Garlic Cloves (whole)

  • 1tbsp Can't Believe Butter

  • 1tsp Olitalia E/V Olive Oil

  • 200g Small Mushrooms

  • 220ml Beer

  • Fresh Thyme

  • Salt & Pepper

Directions:

  • 1. Add the olive oil to a skillet and turn the heat to medium.

  • 2. Add the defrosted sausages and fry on each side until they get nicely browned and crisp.

  • 3. Add the butter, onions and garlic.

  • 4. Fry until the onion starts to caramelize stirring frequently. This can take around 10 minutes.

  • 5. Add the whole mushrooms. Slice them if you're using larger ones or cut into quarters.

  • 6. Season with salt and pepper.

  • 7. Cook for a couple of minutes until the mushrooms start to take colour.

  • 8. Gradually add the beer and bring to a gentle boil stirring frequently.

  • 9. Add the fresh thyme and cover.

  • 10. Lower the heat and simmer for at least 15 minutes or until the beer is almost evaporated leaving a nice thick glaze.

  • 11. You can uncover it for the last minutes to help it evaporate more quickly.

  • 12. Serve with roast or mashed potatoes.
