Banana & Berry Bread

A different take on banana bread with frozen berries. Perfect for breakfast, snacks, or dessert.

Method:

  1. Preheat the oven to 180°C and line a loaf tin with baking paper.

  2. Mash the bananas in a bowl, then mix in sugar, melted margarine, eggs, and vanilla extract.

  3. Sift in flour, baking powder, and salt, then gently mix. Add the milk to loosen the batter if needed. Do not loosen it much cause the berries will drop at the bottom. 

  4. Gently fold in the frozen berries, being careful not to overmix.Pour the batter into the prepared loaf tin.

  5. Bake for 50-60 minutes, or until a toothpick inserted in the centre comes out clean.

  6. Let cool before slicing. Enjoy on its own or toasted with butter on top!
