Ingredients:
400g (about 6) Peeled Prickly Pears
450g Plain '00' Flour
5g Dry Yeast
50g Granulated Sugar
1/2 tsp Salt
1tsp Ground Cinnamon
200ml Lukewarm Milk (around 45°c)
2 Eggs
20ml Extra Virgin Olive Oil
40g Butter or 'Can't Believe' alternative
20g Brown Sugar
Directions:
1. In a large bowl combine the flour, yeast, granulated sugar, salt, warm milk, oil and 1 egg.
2. Work into a dough and knead for 5 minutes.
3. Cover with a kitchen towel and let it rise in a warm place for at least 30 minutes.
4. Open the dough into a rectangle shape on a floured surface. The thickness should be around 1cm.
5. Butter the surface of the dough. Spread a baking dish or cast iron pan with the remaining butter.
6. In a small bowl combine the brown sugar with the cinnamon and sprinkle it over the buttered dough. Leave some for later.
7. Slice the peeled prickly pears into quarters and arrange them on the dough as shown in the video.
8. Cut the dough into 8 strips and roll each strip into a small roll/bun enclosing the fruit inside.
9. Place them into your baking dish and brush them with an egg wash using 1 egg and 2 tbsp of milk.
10. Bake in a pre-heated 180°c oven for about 30 minutes or until they start getting light brown.
