Vegan Sausage Casserole

Simple, quick and all you need is 15 minutes, one saucepan, and plenty of bread to dig in!

Ingredients for 2-3 Persons:

  • 1pkt Quorn Brilliant Bangers

  • 1 Large Onion

  • 1tsp Olitalia E/V Olive Oil

  • 2 Zucchini

  • 1 Red Bell Pepper

  • 1/2tsp Dry Thyme

  • 1/2 tsp Smoked Paprika

  • 200g Chopped Tomatoes

  • 100g Butter Beans

  • Salt & Pepper

  • Some Fresh Parsley

Directions:

  • 1. Cut the sausages into bite-size pieces.

  • Heat up the olive oil, and fry the sausages until they start to get some colour.

  • Add the sliced onion, and fry together until the onion is softened.

  • Add the diced zucchini and sliced pepper.

  • Add the thyme and paprika and continue frying on a medium flame stirring continously.

  • When the zucchini are softened add the diced tomatoes. I used a large can.

  • Season with salt and pepper and lower the flame.

  • Add the butter beans and simmer for about 10 minutes or until the vegetables are cooked.

  • Serve with fresh parsley and plenty of toasted bread.
