Ingredients:

  • 400g Maltese Cherry Tomatoes

  • 2 Garlic Cloves

  • 3tsp Olive Oil

  • 1/4tsp Cayenne Pepper

  • 50g Tomato Sauce

  • 2tbsp Pesto Sauce

  • 1tbsp Fresh Cream

  • 400g Cooked Pasta

  • Parsley, Salt & Pepper to Taste

Directions:

  • 1. Slice cherry tomatoes in half.

  • 2. Crush 2 garlic cloves and add them in a saucepan with 2 tablespoons of olive oil.

  • 3. On medium-high heat cook the cherry tomatoes until tender. Discard garlic and add salt, pepper & cayenne.

  • 4. Add tomato sauce and reduce heat.

  • 5. Combine pesto with cream and add to the tomato sauce. Stir well and cook for 1 minute.

  • 6. Add about 400g of 'al dente' fusilli or penne pasta and mix well for another minute.

  • 7. Add a teaspoon of olive oil

  • 8. Add chopped fresh parsley and serve.
