St. Martin’s Muffins
Ingredients for about 12 muffins:
80g Lamb Brand Walnuts
80g Lamb Brand Hazelnuts
80g Lamb Brand Almonds
150g Vita Natura Pitted Dates
150g Vita Natura Dry Figs
250g Lamb Brand Plain Flour
3 Fresh Eggs
2tsp Baking Powder
120g Unsalted Butter
150g Caster Sugar
140ml Hot Water
Grated Lemon Zest
Grated Orange Zest
Grated Mandarin Zest
1tsp Ground Cinnamon
1/2tsp Ground Cloves
1/2tsp Mixed Spice
1/2tsp Vanilla Essence
A pinch of Salt
Directions:
Chop and soak the pitted dates in the hot water for at least an hour until they become like a paste.
Add a little bit of whiskey to the water, or liqueur of your choice if you want. This step is completely optional.
In a food mixer, work the butter with the sugar until creamy.
Add the eggs, one at a time followed by the fruit zest, spices, and vanilla essence.
Add the pitted dates and finish off with the flour, baking powder, and salt.
When they are well combined, turn off the mixer.
Chop all the nuts and figs into small pieces.
Leave some whole nuts for decorating the surface.
Fold the chopped nuts and figs into the mixture.
Place the muffin liners into the muffin tin.
Add a couple of tablespoons of the mixture into each liner.
Place half of a walnut on top.
Preheat your oven to 180°c and bake for about 25 minutes.
To check if they are done, insert a toothpick in the center. If it comes out clean, they are done. If not, bake for another couple of minutes.
Let them cool off for 10 minutes in the tin, then remove them and let them cool completely on a wire rack.
